Description

Versatile parsley can be used as an herb, vegetable or as an ornamental garden edging. It is highly nutritional and its flavor improves with cutting. Giant Italian parsley is prized for its flavor and is better for cooking than curly parsley. Also use as a garnish.

Planting

Parsley is a cool season crop. In mild climates seed can be planted in late fall and winter. Seeds can take up to 4 weeks to germinate. Soak the seeds overnight in warm water before planting. Plants can grow in sun or light shade in hot climates.

Care

Thin when plants are 2 inches tall. Provide an even supply of water. Give a light application of fertilizer (5-10-10) when deep green color fades.

Harvest

For maximum flavor, pick parsley in the early morning hours before its delicate oils have evaporated.Cut leaves as needed. Seeds may be harvested by cutting the stem and placing it upside down in a paper bag, letting the bag catch the seeds as they fall.

Hint

Small bunches can be hung to dry in the shade for making parsley flakes.
