Description

Beets are not only grown for their roots but their greens are even better nutritionally. Though they prefer cool weather they can grow in a wide range of conditions. They can be easily canned, pickled or frozen for year round eating. This variety, “Ruby Queen” is an All-America Selections Winner meaning that it has been tested by a network of independent judges who determined that its garden performance was superior.

Planting

Beets can be planted throughout the cooler months of the year. For prolonged harvest, stagger your plantings every 2-3 weeks.

Care

Beet seedlings may require thinning several times as each seed ball produces 3-5 seedlings. Thin when the plants are 4 inches tall and eat the greens. Water regularly and avoid overcrowding.

Harvest

Harvest greens when 4 to 6 inches high. Roots are best harvested when 2 inches or less in diameter.

Hint

For good germination, soak the seeds for 24 hours and swish the container several times to break up the air bubbles that cling to the seed coat.
